By a vote of digital hands, who DOESN’T love a good eggroll?! My personal fave belongs to The China in my hometown of Bowling Green. But since I live so far away now, (and I cannot find one that even COMPARES to theirs) I had to improvise. This recipe can be used in a lovely eggroll wrapper and fried in a cast iron pan, or you can have it without the wrapping. Sans the wrapping, you have what I would consider a healthyish meal. Or you could cut the wrappers into strips, fry in some oil and top the meat mixture and I would still consider it healthyish haha And not only healthyish, but it takes less than ten minutes to make! Perfect for us Busy Mamas!

First, I simply start by browning my ground meat over medium heat. For this particular recipe I used ground chicken because it is very affordable, and in my opinon, has way more flavor than ground turkey. In the past I have used ground pork, which is very flavorful, but not as healthy! So while the meat is cooking I sprinkle salt, pepper, garlic powder, onion powder and red pepper flakes. Mix that together and add a few dashes of soy sauce. Toss in some tri-color coleslaw, add a couple more dashes of soy and mix together. Cover and turn off heat, letting sit for a couple of minutes. Once the cabbage has wilted it is ready to serve. Do yourself a favor and garnish with some chopped green onion. Delish, nutritrish-ish and so, so easy!

1 1/2 cups tri-color coleslaw

1 tsp of each; salt, pepper, garlic and onion powder

To taste-  soy sauce, red pepper chili flakes, chopped green onion
