I have a confession.. I love a certain little restaurant with the golden arches, I cannot lie. I know, it’s not healthy. And I know, where the food comes may be questionable..but I don’t care, I love it! When the girls and I are wanting something quick, it is usually our go-to.

So I just knew that for this weeks Grab and Go, I had to stay true to who I am and make something a little unhealthy 😉 It is so yummy, very inexpensive and super easy!

To get started you will need to have your eggs and flour ready. I like to put mashed potato flakes in with my flour. It adds such a crunch to the skin! Also, if you are looking for a little spice, I am addicted to adding “Smack Yo’ Mama” spice to the flour mix. It gives the chicken a slight heat and flavor that really kicks it up a notch! OK, so, once those are set up, heat about an inch of vegetable oil in a saute pan over medium heat. While that is heating, get your chicken seasoned. I use a liberal amount of salt and pepper. Now for the fun part, the frying! You will get messy so have some papertowels handy! It can also get dangerous, I just got splashed with 350 degrees worth of hot oil on my neck this afternoon, so proceed with caution! I dip the tenderloin in the egg, flour, egg again, flour again, oil!

Each side with take about 4 minutes, but the best way to tell if its done is the color. I mean, I dream about the most perfectly colored fried foods so maybe you have no idea what I am talking about but it’s a gorgeous golden brown color..maybe your mouth will start watering, too..I don’t know anything about that 😉

Lay the chicken on some papertowels to soak up the excess oil and cool. Once they are cool, put them in a wrap and add whatever toppings you desire. I was keeping true to the one I love the most so mine includes ranch, shredded cheese and lots of lettuce! Wrap it up in some plastic wrap and you are good to go!
