Waffledilla, huh? Please forgive me, but it is 5 am, and I have been awake since 1:30, all because of a very chirpy little birdie outside of our bedroom window! I had planned to wake up at 6 to get this recipe up but I don’t have anything else to do so here I am haha! Stick with me, I think you are going to like this one!

So, since summer is about to hit, I am trying to get back in the habit of eating a little more healthyish. If you watch any of my videos on YouTube, you know that I am all about the cream cheese, heavy cream, creamed corn, cream of mushroom…if it contains cream, I am using it. And while that is all good and well and SO dang tasty, it has given me a little more softness around my bones than my one piece stretches for…so yea, that is where we are right now! So if mama can’t have the cream cheese with every meal, I need spice! Which is why I think these waffledillas are going to be perfect!

Side note- if you are not hip to the waffle maker as an everything sandwich/tortilla master, please stop what you are doing right now, go to Amazon and order one! I make so many things in ours! Grilled cheese, pizza bob, Monte Cristo, quesadilla (now lovingly being referred to as waffledilla haha), hasbrowns, heck I even make some crispy cheese sticks in there! >>best purchase ever<< especially if you have kids and need to whip something up in no time flat!

In a skillet over medium heat, add some chopped onion, celery and carrots. Sprinkle a little S & P. After about 5 minutes of those softening, toss in some ground chicken. While that is cooking, turn your waffle maker on so it can get nice and hot! Once your ground chicken is all cooked, sprinkle in some garlic powder, salt, pepper and a couple turns of the pan of  Frank’s buffalo sauce. Mix well and turn off heat. In the waffle maker, lay one soft flour tortilla shell down, sprinkle with cheese (whatever you have on hand will work!), put a healthy scoop of the chicken onto the shell, add a little more cheese, and cover with tortilla. Close the wafflemaker and let sit for about 2 minutes. You will know it is done when the cheese is melty and you get those beautiful little charred waffle marks on the outside. You can serve this plain or with a side of bleu cheese or ran….

Listen, I said it was healthyish! I can’t totally deviate from my normal foods! However, if you have way more willpower than me, good for you and if you want to up the  healthy ante even more, I think this would be a perfect addition to a lettuce wrap! Ooo yum!!

-1 lb. ground chicken

1/2 cup chopped onion

1/2 cup chopped carrots

1/2 cup chopped celery

1/4 cup (or to taste, whatever your preference) Franks Red Hot Sauce

10 flour tortilla

Monteray Jack shredded cheese, or whatever you have on hand

Ranch or bleu cheese to dip!
