Meatloaf Monday can get pretty boring so how about a cute, new way to perk it up.. Meatloaf Muffins complete with Mashed Tater “frosting.” It isn’t even funny how easy and yummy this is, and the kids will love it because they look like little dinner cupcakes!

I like to start by preheating the oven to 400 degrees and lining the muffin tin with non- stick foil. I do this because it makes the greasy clean up a whole lot easier and I also think it looks pretty 🙂 In a bowl, you will mix the hamburg, egg, beef gravy, uncooked stove top stuffing and a pinch of salt and pepper. That’s it! The flavoring from the gravy and the stuffing is so great that I will never make my meatloaf any other way! You will cook the meatloaf for about 25-30 minutes.

The mashed potatoes are homemade but feel free to use the instant kind! Once they are cooked and COOLED, I emphasize COOLED because I didn’t let mine cool last time and dang it was hot squeezing that bag! But anyways, I scoop them into a Ziploc baggie and cut a small hole in one of the corners and pipe them onto the little meatloafs. I am gravy obsessed so I drizzle some more gravy over top, but you can dress it up however you like!

I promise this will be a meal your family will be asking for every Meatloaf Monday!

1 cup uncooked Stove Top Stuffing

1/2 cup Heinz beef gravy

1 egg
