Yes, you read that correctly, ranch and feta and yes, they go together marvelously! If you know me, you know I love ranch and I LOVE LOVE LOVE orzo. So it was just natural for me to give this a try. Ever have one of those days when you just stand in front of your stove and wait for it to give you an answer on what to make for dinner? Well that happened to me on Tuesday! So I carried on over to the fridge and there I found it, fetaaaaaaa! (Fun fact, I had refused to try feta until like, a year or so ago!) I thought, nothing can go wrong here..I had some leftover chicken, dry ranch and orzo in cupboard and some heavy cream. Best parts- you can make as little or as much as you want, this is sooo good leftover, it takes almost no time at all and my girls ate every last noodle..perfect.meal.
I started by putting a couple teaspoons of extra virgin olive oil in my skillet, and over medium heat, toasted the orzo until it was a light golden brown. Once it got some color to it, I added in my chicken broth. I turned down the heat and let it simmer. While it was simmering, I added my dry ranch seasoning, and a pinch of salt and pepper. Once that was all blended together, I tossed in some of that delicious, salty feta. Mixing it well until the feta had melted and then covered for about 4 minutes. Once the 4 minutes were up, I folded in some frozen corn and heavy cream. If you notice the orzo sticking to the pan, it is fine to add in more broth. Be sure to stir well, and then add in the leftover ranch chicken. Cover and let simmer until the broth is soaked into those tiny little pastas. Garnish with some parsley and serve right away!

1 cup orzo
1 cup chicken broth
1/2 cup frozen corn
1/2 cup crumbled feta
2 tablespoons dry ranch seasoning
1/4 cup heavy cream
1 cup ranch chicken
salt and pepper to taste
fresh parsley for garnish
